Orange Muffins

1 orange plus 1/2 cup orange juice
1 egg
1/2 cup wholemeal flour
1/2 tspn baking soda
6 tblspns sugar
125g butter
1 cup flour
1 tspn BP
1/4 tspn salt
1/2 cup raisins or sultanas

Cut the orange into quarters and remove pips. Leave the skin on.
Place the orange pieces into food processor with extra juice and process until peel finely chopped.
(Orange could be put through the mincer if no processor.)
Melt butter.
Add butter and egg to food processor. Process for 5 seconds.
In bowl, combine flour, wholemeal flour, baking powder, baking soda, salt, sugar and raisins.
Add orange mixture.
Mix lightly and spoon into muffin pans.
Bake at 190C for 15-20 minutes or until cooked.

Date & Apple Muffins

3/4 cup flour
1/4 cup sugar
1 cup bran
3/4 cup chopped dates
1 egg
1 tspn baking soda
1/4 tspn salt
1/2 cup grated apple
1/2 cup milk

Sift flour, baking soda, sugar and salt into a bowl.
Mix in the bran.
Add the grated apple and chopped dates.
Stir in milk and egg until ingredients are combined.
Three quarters fill greased muffin pans.
Bake at 180C for 12-15 minutes.

Orange & Sultana Muffins

1 orange
2 tblspns safflower oil
2 egg whites
1 cup rice bran
2 tspns nutmeg
1/4 cup runny honey
1 cup skimmed milk
1 cup flour
2 tspns BP
1 cup sultanas

Wipe and quarter the orange.
Place in food processor with honey and oil. Process to a pulp.
Add milk. Process to blend.
Whip egg whites until stiff.
Place flour, bran, baking powder and nutmeg in a bowl.
Mix and aerate with a fork.
Add sultanas, then add liquid ingredients and stirr to mix.
Fold in the beaten egg whites.
Spoon mixture into greased deep patty pans.
Bake at 180C for 20-25 minutes.

Fruit Muffins – Ted

2 cups flour
1/2 tspn salt
75g butter
4 level tspns BP
1/2 cup caster sugar
1 cup milk
1 cup blueberries or sultanas or cubed pineapple or mashed banana or cooked apple

Sift dry ingredients into bowl.
Add sugar and stir in.
Melt butter and cool slightly.
Add milk and egg and beat to combine.
Then add fruit.

Mix 1 tblspn sugar and 1/2 tspn cinnamon
Sprinkle on top of muffins.
Bake in deep muffin pans 12-15 mins oven 220C

Carrot & Apple Muffins – Peg A

1 cup grated apple
1 cup bran
1/2 tspn baking soda
1/2 tspn salt
1/2 cup raisins or sultanas
1 cup grated carrot
1 cup flour (wheatmeal or white)
2 tspns BP
1 tspn spice or cinnamon

Mix together:
75g melted butter
1 beaten egg (large, or 2 small)
3/4 cup milk
1/2 cup brown sugar (firmed)

Then mix in dry ingredients.
Do not over-mix.
Bake 15 mins 200C.

Banana Oat Muffins – June

1/2 cup rolled oats
1/2 cup milk
125g butter
1/4 cup sugar
1 cup mashed banana
1 cup flour
2 tspns BP
1/2 tspn baking soda
1/4 tspn salt
1/4 tspn cinnamon

Soak the rolled oats in the milk for 5 mins.
Melt the butter.
Lightly beat the egg.
Add the butter and egg to the oat mixture.
Stir in the sugar and mashed banana.
Sift the flour, baking powder, baking soda, salt and cinnamon.
Add the flour mixture to the batter, stirring only to moisten the dry ingredients.
Spoon the mixture into muffin pans.
Bake at 190C 15-20 minutes, or until cooked.
Very nice served warm.

Wholemeal Nut Muffins

Melt in a pot:
50 g butter
2 tblspns demerara or raw sugar
1 tblsp golden sugar

Add:
1 unbeaten egg
Approx 0.75 cup milk
Half tsp vanilla
Stir.
– and add
:
1 cup plain flour
1 cup wholemeal flour
2 rounded tsps BP
Half tsp baking soda
0.25 tsp salt
Half cup raisins or other fruit
Half cup broken nuts.

Spoon into greased pans.
Top with nut flakes, sesame seeds or similar.
Bake 190 C for 10-12 minutes.

Apple Cakes – Frances M

125g butter
1 egg
1/2 teaspoon nutmeg
1 cup cold stewed apple
1 cup raisins or other dried fruit
1 cup sugar
1/4 teaspoon spice
1 3/4 good cups flour
1 teaspoon soda in 1/4 cup hot water

Cream butter and sugar, add egg and cold apple.
Mix in dry ingredients, flour and soda.
Bake in hot gem irons or patty pans 10 minutes in hot oven.
