150g butter
0.5 cup finely chopped peanuts
2 dessertspoons golden syrup
1 cup cornflakes
0.5 cup sugar
1 cup coconut
1 cup flour
1 tsp BP
Melt butter and syrup, add to dry ingredients.
Place in sponge roll tin and bake in a slow to medium over for 20 minutes.
Ice while warm with the following:
Icing –
2 tblsps butter
1 dessertspoon golden syrup
1.5 cups icing sugar.
Excellent Oven Cleaner – Shirley M
1/2 cup ammonia, 2 tblsps soap powder, and electric jug-full of boiling water.
Cool or cold oven. Leave overnight, block vent. Have door shut.
Wipe out next day.
Coconut Ice Square
125g butter
0.25 cup coconut
1 tsp BP
0.5 cup sugar
1 breakfastcup wholemeal flour
A few handfuls of cornflakes or weetbix broken up.
2 tsps cocoa.
Melt butter and pour over dry ingredients.
Press into tin.
Bake 10 mins at 180c.
While mixture is cooking, prepare following:
1.5 tblsps milk
1.5 tblsps condensed milk
1.5 cups coconut
1.5 tblsps butter
1.5 cups icing sugar
Blend, just warming and spread over base while hot.
Many-Way Wonders – Peggy M
Step 1. Empty a 400g tin of sweetened condensed milk into a mixing bowl.
Step 2. Add any one of following mixtures:
a.
2 cups coconut
1 cup chopped dates
1 cup kornies
1 cup walnuts
or
b.
2.5 cups crushed kornies
1 cup coconut
1.5 cups raisins
0.5 cup chopped walnuts
or
c.
2 cups crushed biscuits
1 cup chopped mixed fruit
1 cup coconut.
Step 3.
Mix well with condensed milk.
Place approximately heaped teaspoon amounts on greased tray.
Roll into balls.
Bake in a slow oven till slightly brown.
Lemon Cake
2 eggs
125g butter
1 heaped tsp cream of tartar
1 level tsp baking soda
1 lemon or orange
1 teacup sugar
1 cup flour
1/2 cup milk.
Beat eggs and sugar well.
Add grated rind and 2 tsps lemon juice.
Add sifted flour and cream of tartar.
Meanwhile, bring milk and butter to boil.
Add baking soda, then add hot mixture to ingredients in bowl.
Mix gently.
Bake in 20cm cake tin or sponge roll tin 20-30 mins at 180c.
Ice with lemon butter icing using remaining lemon juice.
Bread Rolls for Tea – Audrey H
Cook 1 finely chopped onion in a little butter.
Add 1 cup milk, 2 tsps cornflour, shake or two of pepper, 1 cup grated tasty cheese.
Stir well together, cool slightly.
Spread over fresh bread slices and roll up.
Toast and butter to serve.
Crummy Biscuits – Audrey H
110g butter
1 small cup sugar
1 tblsp syrup
Melt these first three ingredients together in a pot.
Add 1 beaten egg followed by dry ingredients:
1 cup breadcrumbs (I use loaf ends, crumbling them in my blender)
1 cup coconut
Pinch salt
1 tsp BP
Spices if liked (1/2 tsp)
Roll into little balls or teaspoon lots and flatten with a fork.
Bak 15-20 minutes in moderate 150c oven.
Chocolate Coconut Square – Margaret D
125g butter
1 egg
1 tsp baking powder
Pinch salt
125g sugar
125g flour
1 tblsp cocoa
1 cup coconut
Cream butter and sugar.
Sift dry ingredients.
Beat egg and add alternately with dry ingredients.
Press into sponge roll tin and bake 25 minutes at 180c.
When cold, ice with chocolate or peppermint icing and sprinkle with coconut.
Bournvita Square – Margaret D
125g butter
1 breakfast cup flour
1 teaspoon baking powder
50g sugar
1 breakfast cup coconut
3 teaspoons Bournvita/Milo
Cream butter and sugar.
Add Bournvita, then other dry ingredients.
Bake in a greased sponge roll tin for 25 minutes 180c.
Ice while warm and sprinkle with Bournvita.
Baked Savoury Tea Dish – Audrey
Butter enough bread (crusts trimmed off) to cover a baking dish, buttered sides down.
Slice to cover: tomatoes, 1 onion (if liked), season with pepper.
Sprinkle over 1 cup grated cheese.
Butter enough bread slices to cover, buttered sides up this time.
Beat together 3 eggs, 1 1/2 cups milk.
Pour over and leave to stand 2-3 minutes.
Baked 150C for 45 minutes or until set.
Apple Cakes – Frances M
125g butter
1 egg
1/2 teaspoon nutmeg
1 cup cold stewed apple
1 cup raisins or other dried fruit
1 cup sugar
1/4 teaspoon spice
1 3/4 good cups flour
1 teaspoon soda in 1/4 cup hot water
Cream butter and sugar, add egg and cold apple.
Mix in dry ingredients, flour and soda.
Bake in hot gem irons or patty pans 10 minutes in hot oven.
Savoury Tomato and Pasta Tea Dish – Audrey
Boil pasta as per packet instructions.
Put into a pot a little butter and cook a finely hopped onion with chopped pieces bacon or ham.
Add fresh sliced tomatoes or a can of tomatoes seasoned with a pinch of sweet basil.
Pepper to taste.
Thicken with a little cornflour.
Add 1 cup grated cheese.
Stir well to melt cheese.
Serve over pasta, toast, sausages or rissoles.
Impossible Quiche – Kath R
Mix together: 3 eggs, 1 tablespoon oil, 1 chopped onion, 1/2 cup self-raising flour, 1 cup grated cheese.
Then – Pour over silverbeet or spinach and top with 2 slices bacon.
(Optional: tomatoes, corn, mushrooms, asparagus.)
Bake 3/4 hour at 180C
